Chunks of fresh cranberries and dark, milk, and white chocolate chips dress up oatmeal cookies for the holidays.

Ingredients
1 ⅓ cups all purpose flour
 ¾ cup sugar
 ½ cup cocoa powder
 1 tsp baking powder
 1 tsp baking soda
 1 tbsp cornstarch
 ½ tsp salt
 ¼ cup oat milk
  cup canola oil
 1 tsp vanilla extract
 ½ cup apple sauce
1 cup shredded zucchini, liquid squeezed out
 1 cup chocolate chips
1

Preheat oven to 350°F. Line a 9"x9" pan with parchment paper as shown in photo.

2

Whisk together all dry ingredients (flour, sugar, cocoa powder, baking powder, baking soda, cornstarch, salt) except for chocolate chips.

3

To the dry ingredients, fold in oat milk, oil, vanilla, and apple sauce and mix until combined. Add in 1/2 cups of chocolate chips as well as the shredded zucchini. Batter will be thick, yet pourable.

4

Pour the batter into the prepared pan. Top with the remaining 1/2 cup of chocolate chips. Bake for approximately 45-50 minutes, or until a toothpick test in the middle comes out most clean (you might see some melted chocolate chips!)

5

Let the brownies cool in the pan to set.
